Barbecue Pork marinated in a Mop sauce using homemade apple sauce. Goes great with roasted potatoes and a corn, roasted red pepper and cilantro salad. (See salad recipe)
Ingredients
- 700 grams Pork Tenderloin or Shoulder
Spice Rub Mix
- 2 tbsp Packed dark brown sugar
- 1 tbsp Paprika
- 1 tbsp Chili powder
- 1.5 tsp Ground cumin
- 1/4 tsp Cayenne
- 1 tbsp salt
- 1 pinch Freshly ground pepper to taste
Sauce Mix
- 2 tsp Worcestershire sauce
- 60 ml Cider Vinegar
- 2 tbsp Molasses
- 80 ml ketchup

Preparation
- Combine all ingredients of the Spice Rub Mix into a bowl, and rub half of the mixture all over the pork and let stand 15 minutes
- Prepare the Sauce Mix by combining the ketchup, vinegar, molasses, and Worcestershire sauce in separate bowl
- After the 15 mins, rub the remaining half of Spice Rub mixture on the pork
Grill
- Place the pork over the indirect heat section of the grill. Grill 15 minutes. Turn the pork and grill another 12-15 minutes, until thermometer registers 160 degrees.
- Lightly glaze the pork with the Sauce Mix and let it cook for 2 more minutes.
- Remove the pork from grill, cover it and let stand for 10 minutes before cutting. Serve with the remaining Sauce Mix (I recommend heating the sauce on the stove before serving)
